OUR STORY

KHAO-SŌ-i is more than a restaurant. It’s a journey, bringing the soul of Northern Thailand from the streets of Chiang Mai to the heart of London.

At the centre of our story are Chef Win and his wife, Por, who inherited a treasured family recipe passed down through generations for over forty years. After years of working as a chef abroad, Chef Win dreamed of creating a dish that could bring the authentic flavours of Northern Thailand to tables around the world and Khao Soi became that dish.

Together with his wife, Por, whose artistic vision shaped the design and soul of their restaurant, Chef Win founded KHAO-SŌ-i with one mission: to share authentic Northern Thai flavours and a legacy of Northern Thai craftsmanship, carefully preserved and lovingly shared with the world.


OUR SIGNATURE

Our signature Khao Soi begins with a harmony of 32 hand-selected spices, each chosen to create a broth that is rich, creamy, and deeply aromatic.

From the gentle warmth of dried chillies to the bright fragrance of kaffir lime, and the earthy depth of turmeric and galangal, every spice plays its part in a delicate symphony of flavour. The broth is simmered slowly, allowing time, patience, and care to transform these ingredients into the smooth, layered base that defines Khao Soi.
